This view of a nutria documents the large, webbed back feet and the hairless, rat-like tail. One of Louisiana's most interesting attempts at nutria control was a state-sponsored ad campaign designed to tempt the Cajun palate. The ads claimed that nutria meat tastes like rabbit. I've never eaten a nutria, but they are sold in restaurants as ragondin--the Cajun French name for nutria. Ragondin en brochette (water rat on a stick) anyone? They do, of course, make excellent 'gator chow.
